- 1 1⁄2 lbs red potatoes, quatered
- 1 cup diced red bell pepper
- 1 1⁄2 lbs chicken breasts, cut into 2 inch pieces
- 1 cup sour cream
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 ounce powdered ranch dressing mix
- 1 teaspoon garlic salt
directions
- Preheat oven to 350°F.
- Blanch potatoes in boiling water for 3 minutes. Drain.
- Prepare a 9x13 casserole dish with nonstick spray. Spread the potatoes in the bottom of the dish. Layer the peppers and chicken on top.
- In a large bowl combine the sour cream, soup, ranch dressing mix , and garlic salt. Spread over the chicken.
- Cover with foil and bake for 1 1/2 hours, until browned and bubbly.

This was very good!!! Nice comfort food for a chilly night; it seemed a little salty to me so I may add less garlic salt next time; DH said it was fine though, so it could be just my taste buds! I didn't make any changes except I used light sour cream as that's what I had on hand. It tasted great and was VERY easy to put together!!! Made for your Week 10 Foortball Pool win....congrats!!!!
