Penang Red Curry Paste

- 59.16 ml tomato paste
- 1 small onion, peeled and quartered
- 14.79 ml galangal, peeled and sliced (or substitute ginger)
- 3 garlic cloves
- 14.79 ml soy sauce
- 4.92 ml dark soy sauce
- 29.58 ml fish sauce (if unavailable, substitute regular soy sauce)
- 4.92 ml shrimp paste
- 14.79 ml paprika
- 29.58 ml chili powder
- 14.79 ml coriander seed, ground
- 1-2 red chili pepper, depending on how spicy you want it, deseeded
- 2.46 ml turmeric
- 14.79 ml cumin
- 2 kaffir lime leaves
- 2.46 ml cinnamon
- 1.23 ml nutmeg
- 1.23 ml ground cloves
- 396.89 g can coconut milk
- 1 lime, juice of
directions
- Place all ingredients (except garnish) in a food processor. Process well to form a paste.
- Add up to 1 more can coconut milk to the paste (this will create a curry sauce).
- Add meat, fish, tofu, wheat gluten, beans or vegetables, and cook either in a wok / large frying pan, or in a covered casserole dish in the oven.
- Bake meat based penang curry at 375 degrees F. for at least 1 hour, or until meat is well done.
- Garnish your Penang Curry dish with the fresh basil leaves.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
